The following is an addendum to the synopsis which will act like a preface to the book:

There are many attributes that characterize healthy food substances. Obviously the more natural the better and the less acidic the better. Our mouth has the structure and chemistry to measure the value of these molecules. Those that cause inflammation and decay in the mouth will tend to cause problems for the rest of the body. Those that feed bad bacteria or yeast in the mouth will feed bad bacteria and yeast in the gut. Those that generate a healthy saliva, or a non-acidic saliva will tend to benefit the gut and the colon.

Another less talked about good attribute is symmetry in the structure of a molecule. Our bodies are naturally symmetrical from left to right with a head and heart in the center and likewise the molecule of xylitol is perfectly symmetrical left to right. This is unlike stevia which is not symmetrical yet has the same number of carbon atoms. This unique structure allows xylitol to fold and grasp a Calcium ion with three carbon bonds in what is called a tri-dentate ligand. This allows it to carry calcium to both bones and teeth. This and other special properties may be why it is produced by our own cells and is then stored in the mitochondria. Could it be that xylitol is helping both the mitochondrial DNA and RNA to repair itself and to produce important building blocks for our body?  Because it is produced by our body, I call it “super-natural.”

Stevia has no positive healing ability and may cause hormonal and intestinal problems. It is also much sweeter than xylitol and some studies suggest that it can both harm the kidney and affect blood pressure. Unlike xylitol you cannot cook with it and the FDA will not allow it in processed foods. Xylitol is natural in strawberries, raspberries, plums, cauliflower, mushrooms and in the corn cob. Xylitol’s by-products help to protect the colon and when absorbed in the blood stream it protects both the host body and the fetus of a pregnant woman. Sixty-one years of studies among Finland’s entire population indicates that it stops tooth decay and even inoculates the mother’s newborn baby, protecting it from tooth decay up to age of 5.

Xylitol’s molecular symmetry apparently also gives it the ability to draw fluids in a hypertonic or hydroscopic way, thus helping to heal tissue linings in the body by washing away toxins, salts and bacteria. This includes stopping constipation in the colon, helping to heal the airway lining of some cystic fibrosis patients, healing the inflamed lining of the middle ear and nasopharyngeal passage, washing away toxins, bad bacteria and acidity in the mouth- thus preventing both tooth decay and gum inflammation.

So, the BIG question is why does Stevia take up so much shelf space in all the major grocery stores whereas xylitol is given NO space? Why isn’t the safe nutritive Xylitol offered as a healthy sugar? Is it because the sugar cartel is afraid of it or is it just the profit motive? Note also that we sell a lot of unnatural sugar substitutes that are non-nutritive and were accidentally discovered by a chemist trying to either find a substitute for DDT or other chemical. They use 3 chloro-atoms to staple together glucose to fructose rendering it so big that chemists claim it cannot enter the bloodstream. But what happens in those countless people who have a “leaky gut” that allows toxins and larger molecules into the blood stream? These non-nutritive substitutes may be accumulating in our livers and organ systems like high fructose corn syrup is. Are we to trust these profit-making biased studies?
